Roasted Brussels sprouts with Sharon fruit

Ingredients for 4 servings:

  • 700 g Brussels sprouts
  • 3 Sharon fruits
  • 3 tbsp cranberries, dried
  • 3 shallots
  • oil
  • 100 ml vegetable stock
  • salt and pepper
  • 3 tbsp walnuts, roasted

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Clean, wash, and slice the Brussels sprouts. Peel the Sharon berries, slice them, and quarter them. Peel and finely dice the shallots. Heat oil in a pan and sauté the Brussels sprouts. Add the shallots and cranberries, sauté, deglaze with stock, and simmer with the lid on for about five minutes. Add the Sharon berries briefly at the end. The Brussels sprouts should still have a bite. Season with salt and pepper and serve sprinkled with the coarsely chopped walnuts.
