Wild broccoli

Ingredients for 2 servings:

  • 400 g broccolini (wild broccoli)
  • 200 ml vegetable stock
  • Salt
  • nutmeg
  • Oil for frying
  • some butter, optional

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

The wild broccoli can basically be used as purchased. If necessary, you can trim the bottom of the stalks a little. Do not wash the broccoli. Heat some cooking oil in a pan or wok and sear the broccoli on all sides for about 4 minutes, seasoning with a little salt and nutmeg. This can be done in several batches if the pan isn’t big enough. Once all the broccoli stalks are seared, deglaze with the vegetable stock and let everything simmer/simmer gently over low heat for about 5 minutes. Note: Wild broccoli is quick and easy to prepare and makes a healthy, low-fat side dish for many dishes. If you like, you can add a knob of butter to the hot broccoli before serving, although this will no longer be low-fat.
