Ingredients for 4 servings:
- 200 g cashew nuts
- 130 g raw cane sugar
- 70 g white sugar
- 1 tbsp vanilla sugar
- 125 ml water
Instructions
Working time approx. 5 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 50 minutes
Place the water and sugar in a deep pan or wide saucepan and heat. When the sugar has dissolved and the mixture begins to boil, add the cashews. Bring the water and sugar mixture to a boil, stirring continuously. Once the water has evaporated, it will become crumbly in the pan. Then reduce the heat and continue stirring. The crumbly sugar mass will now liquefy again. As soon as the nuts turn an even golden brown, immediately remove the pan from the heat and place the nuts on a baking sheet lined with parchment paper. Immediately separate the nuts with a spatula and let them cool. I can’t describe the temperature well. My stove has a setting from 1 to 12. I let it boil down to level 12 and later reduced it to about level 6.
