Super delicious roasted almonds

Ingredients for 6 servings:

  • 200 g almonds, unpeeled
  • 200 g sugar
  • 100 ml water
  • 2 packets of vanilla sugar
  • 1 tbsp cinnamon

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring the water, sugar, cinnamon, and vanilla sugar to a boil in a non-stick (!) pan. Once boiling, add the almonds and continue cooking at high heat. Let it cook until the sugar has dried, stirring constantly. Reduce the heat to medium and continue stirring until the sugar begins to melt again and the almonds caramelize. Tip the roasted almonds onto a baking tray (preferably lined with baking paper) and immediately separate them so they don’t stick together. Tastes like they’re fresh from the fair. Note: I’ve—unfortunately—also tried varying the recipe with cocoa powder and amaretto. But it’s best not to do that; it doesn’t work properly, and the almonds don’t turn out the way they should.
