Pumpkin Spaetzle
The perfect pumpkin spaetzle recipe with a picture and simple step-by-step instructions.
- 800 g Hokaido pumpkin
- 300 g Spaetzle flour
- 300 g Water
- 5 piece Eggs
- Salt
- Szechuan pepper
Prepare the pumpkin

prepare dough
- Place the pot with water and add salt when the water is warm. In the meantime, knead the grated and cooked pumpkin with the flour and eggs, water and the spices in the food processor.
Ferment
- As soon as the water boils, press the spaetzle through the spaetzle sieve, scrape, slice, etc. Let it simmer until the spaetzle float on top. Then remove from the water and drain.
