Roasted tomatoes with feta cheese

Ingredients for 8 servings:

  • 1 kg cocktail tomatoes
  • 8 garlic cloves
  • 4 tbsp olive oil
  • 4 tbsp balsamic vinegar
  • 2 tbsp brown sugar
  • 400 g sheep’s cheese, diced
  • Pepper, colorful
  • 1 bunch arugula

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

delicious salad alternative for grilling

Wash the cherry tomatoes and place them in a baking dish (halve them if necessary). Peel 4 garlic cloves, leave them whole, and place them in the corners of the dish for easier retrieval. Crush the other 4 cloves and scatter them over the tomatoes. Also, season with salt, olive oil, balsamic vinegar, and brown sugar. Sprinkle the diced feta cheese over the tomatoes and finally season with pepper. Bake in a preheated oven at 180°C for 30 minutes. Sprinkle the arugula over the tomato and feta cheese casserole before serving, which is then served warm.
