Ingredients for 3 servings:
- 1 pack of puff pastry
- 1 cup of quark
- 1 handful of almond sticks or almond flakes
- 1 lemon(s), zest
- 1 tsp cinnamon
- 2 tbsp brown sugar
- 5 apples e.g. Braeburn, Boskoop or Granny Smith
- 1 tbsp semolina
- 1 handful of raisins
- 1 pack of marzipan paste
- 3 tbsp milk
- 1 egg yolk
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes
Carefully roll out the finished puff pastry. Dice the peeled and cored apples and mix them in a bowl with the quark (100–250 g, depending on your preference), the slivered almonds, a little lemon zest, raisins (optional, soaked in a little apple juice, Calvados, or rum), brown sugar, and cinnamon. Adjust the amount to your desired sweetness. Then add a little semolina to the mixture to prevent the puff pastry from getting soggy in the oven. Lightly thicken the mixture; the amount of semolina depends on the juiciness of the apples and the amount of quark. Spread this mixture in the center of the puff pastry. Distribute the marzipan mixture in small cubes on top. Roll the puff pastry into a strudel. Brush it with a mixture of egg yolk and a little milk and sprinkle it again with a little brown sugar. Then we place the strudel in the oven and bake it at approximately 180 degrees Celsius for 25 to 30 minutes. If desired, it can also be served with vanilla sauce, vanilla ice cream, or whipped cream.
