Ingredients for 4 servings:
- 200 g arugula or rocket
- 200 g butter
- Salt
- Lemon(s) – peel, grated
- possibly garlic
- Cayenne pepper

Wash the rocket, sort through, and remove any overly long stems if necessary, although they won’t be a problem in this case. Provided they’re tender and not too thick, dry the rocket very carefully between two cloths or dry thoroughly in a salad spinner. Beat the butter with the whisk of a hand mixer until fluffy, season with salt, grated lemon zest, and a touch of cayenne pepper. Add the rocket leaves and mix with the butter. Alternatively, place everything, but the butter first, in a blender and process on low speed until a bright green butter is obtained.
