Rocket Pesto
The perfect rocket pesto recipe with a picture and simple step-by-step instructions.
- 125 g Fresh rocket
- 10 tbsp Olive oil
- 1 good handful Basil leaves
- 2 small Garlic cloves
- 2 small Chili
- 1 leveled tsp Black pepper
- 50 g Walnuts
- 75 g Grana Padano
- 0,5 tsp Lime zest
- 1 tbsp Lime juice
- 0,5 tsp Salt
- First, the fresh rocket is sorted and washed. Then spin dry in the salad spinner. Then roughly chop through.
- Pour the oil into a tall container. Add the basil leaves, garlic, chilli and pepper and mix well with the hand blender.
- Gradually work in the rocket and puree it finely.
- Add walnuts, Grana Padano and lime zest and juice and work in.
- Only add a little salt to taste at the end.
- Pesto not only tastes good with pasta, but also as a spread, for example in sandwiches. It goes well with grilled food and much more.
