Rocket Soup with Prawns
The perfect rocket soup with prawns recipe with a picture and simple step-by-step instructions.
Soup insert
- Frozen king prawns
- Clarified butter
- 1 glass Cognac
Rocket soup
- 1 half Onion
- 1 half Clarified butter
- 1 teaspoon Chopped garlic
- 250 ml Vegetable broth
- 1 Handful Arugula
- 1 Handful Salt
- 1 pinch Sugar
- 1 pinch Chilli from the mill
- 1 pinch Balsamic glaze white
- 2 teaspoon Mayonnaise
- 1 corner Processed cheese
Soup deposit – prawns
- Fry the prawns frozen in clarified butter – cover and let simmer for a few minutes – pour cognac over them shortly before serving and flambé (be careful with the flame – switch off the extractor!) –
Rocket soup
- Pluck the rocket from the coarse stems, wash it thoroughly and then chop it into small pieces
- Cut the onion into no cubes and sweat in clarified butter until translucent – add the finely chopped garlic and roast lightly – pour hot vegetable stock – add the rocket and simmer gently for 5 minutes
- Now add the processed cheese and the majo (cream can also be used, but I still had some homemade majo left that had to be removed) – season with salt, a little chilli and a pinch of sugar – season with white balsamic cream
- Thoroughly puree the soup with the blender and serve with the prawns and some rocket leaves
