Romaine lettuce with asparagus and walnuts

Ingredients for 4 servings:

  • 2 romaine lettuce hearts
  • 1 large apple, red, sweet
  • 2 handfuls of walnuts, roughly chopped
  • 4 slice(s) cheese (smoked cheese or ham smoked cheese)
  • 1 small jar of asparagus, in pieces
  • 200 g whipped cream
  • 3 tsp apple cider vinegar
  • 3 tsp Dijon mustard, or other coarse-grained mustard
  • 1 tsp liquid honey, e.g. forest honey
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the lettuce hearts into bite-sized pieces and place them in a bowl. Cut the apple and smoked cheese into small cubes and place them in the bowl. Add the walnuts and asparagus pieces. Mix the dressing in a separate small bowl. Mix together the heavy cream, apple cider vinegar, mustard, and honey. Season with salt and pepper. Tip: Do not add the dressing to the salad until ready to eat, otherwise it will become soggy.
