Rooibos Chai

Ingredients for 6 servings:

  • 1 liter of boiling water
  • 500 ml soy milk (soy drink), warm (alternatively: milk)
  • 6 cardamom pods, green
  • 5 carnations
  • 4 black peppercorns
  • 1 tbsp fennel seeds
  • 1 tsp anise
  • 1 tsp ginger, freshly grated (up to 2 tsp)
  • 1 stalk(s) cinnamon
  • 3 tsp, heaped tea, natural rooibos tea
  • 2 tbsp syrup (agave syrup, alternatively: honey)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Caffeine-free version of the classic Indian spiced tea, also available vegan

Break the cinnamon stick. Crush the remaining dry spices in a mortar and pestle. Place the grated ginger, cinnamon, and other spices in a pot and roast briefly until the spices begin to smell. Pour in the water and simmer on low heat for about 6-8 minutes. Then add the rooibos tea and let it steep on low heat for about 8-10 minutes. Add the soy milk and strain the tea into a teapot. Sweeten with agave syrup or honey. Note: The specified amount of sweetener is intentionally kept low. If you like it sweet, simply use a little more agave syrup or honey.
