Spread the love

Ingredients for 1 servings:

  • 1 tbsp ghee (coconut ghee), alternatively ghee or butter
  • 1 onion(s), chopped
  • 2 parsley root(s), chopped
  • ½ mandarin orange(s), cut into small pieces
  • 1 shot of water
  • salt and pepper
  • Cumin powder

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

quick and vegetarian

Heat the coconut ghee in a saucepan and brown the chopped onion. Then add the diced root parsley and fry it briefly with the onion. Add a splash of water. Season everything with salt, pepper, and cumin to taste. Meanwhile, finely chop the mandarin orange and add it. Heat the dish until hot. Serve with a fried egg, and this quick vegetarian meal is ready. If you’re not a fan of the typical taste of root parsley, you might find this recipe more appealing, as the sweetness of the mandarin orange pleasantly softens the flavor of the root vegetable.
