Vegan red cabbage curry

Ingredients for 2 servings:

  • ½ head of red cabbage
  • 1 can coconut milk
  • 3 tbsp curry paste, green
  • some oil
  • possibly sauce thickener
  • possibly sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cut the red cabbage into fairly large strips. Add the oil to the pan and fry the red cabbage until the desired consistency is reached. Add the coconut milk. Stir in the curry paste and bring to a boil. If desired, thicken the liquid with a sauce thickener. Season with sugar to taste. Serve with rice, for example.
