Ingredients for 4 servings:
- 1 kg roast beef
- 1 ½ kg carrot(s) (roots)
- 1 bay leaf
- 1 ½ liters of beef broth
- 1 bunch of parsley
- 1 kg potatoes
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes
Carrot stew
Cook the meat with beef broth and a bay leaf in a pot for about 1.5 hours. Meanwhile, clean and finely chop the carrots, and add them after 1 hour of cooking. Then remove the meat, dice it, and return it to the carrots. Add the parsley at the end. Meanwhile, peel and dice the potatoes, and boil them in salted water. Arrange on plates and serve.
