Ingredients for 4 servings:

  • 100 g sugar
  • 3 egg yolks
  • ½ vanilla pod(s)
  • 4 cl gin
  • 2 sprigs rosemary, medium
  • 500 ml cream

Instructions

Working time approx. 30 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 30 minutes

Chop the rosemary. Beat the egg yolks with sugar and vanilla bean pulp over a hot water bath until frothy, then add the gin. Stir in the chopped rosemary and let it rest briefly, occasionally whipping the cream until stiff peaks form. Then chill the mixture over ice cubes and fold in the whipped cream. Line a baking dish with cling film and pour the mixture into the mixture. Freeze for about 4-5 hours. Serve with warm cherries. It looks beautiful and tastes fantastic!
