Rosienen Quark Cake from Tray

  • 8 Egg yellow
  • 2 kg Layer cheese
  • 275 g Sugar
  • 6 packet Vanilla sugar
  • 100 g Durum wheat semolina
  • 1 Lemon, grated zest and juice
  • 8 Protein
  • 2 tbsp Sugar
  • Icing sugar for dusting
  1. Boil 1,100 ml of water, pour over the raisins and soak for approx. 45 minutes. Then drain.
  1. Grease the fat pan (approx. 32×39 cm; at least 3.5 cm deep) and sprinkle with breadcrumbs. Separate eggs. Mix the layered cheese, egg yolk, 275 g sugar, vanilla sugar, semolina, lemon zest and juice with the hand mixer. Beat the egg white and a pinch of salt until stiff, sprinkling in 2 tbsp sugar. Fold into the cheese mixture in 2 portions. Carefully fold in the raisins.
  1. Spread the cheese mixture on the drip pan. 1m preheated oven (electric stove: 175 c / convection: 150C / gas: level 2)
  1. Bake for 60-70 minutes. Let stand in the switched-off oven for 5-10 minutes. Then leave to cool on the drip pan on a wire rack for about 4 hours. Dust with powdered sugar just before serving.
