Ingredients for 1 servings:

  • 3 m.-sized potatoes
  • e.g. salt and pepper
  • olive oil
  • 1 tomato(s)
  • 1 ball of mozzarella
  • e.g. basil
  • e.g. balsamic vinegar

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Peel and grate the potatoes. Then add salt and wait a moment to allow the moisture to escape. Squeeze the potatoes well to ensure as little water as possible remains in the potatoes. Either with your hands or a tea towel. Season with salt and pepper. Shape the potato mixture into two equal-sized, round, and thin rösti and fry them in a pan with olive oil until golden brown on both sides. Cut the tomato into 8 thin slices and the mozzarella into thin slices. Now first add 4 tomato slices the size of a rösti to the pan and cover with half of the mozzarella slices, then place a rösti on top. Repeat with the second rösti. Fry for another 2 minutes, then remove from the pan with a spatula and slide the rösti down onto the plate. Tear a little more basil over the top and carefully drizzle with a few drops of balsamic vinegar.
