Rösti or potato pancakes with apple sauce

Ingredients for 4 servings:

  • 6 apples
  • 1 tsp cinnamon powder
  • 50 g sugar
  • 150 ml water
  • 1 kg potatoes, waxy
  • 2 eggs
  • 1 small onion(s)
  • 1 pinch(s) of salt and pepper
  • 1 pinch(s) nutmeg, freshly grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

For the applesauce, peel and core the apples, and cut them into small pieces. Place them in a saucepan with the water and sugar. Bring to a boil with the lid closed. Once boiling, puree the applesauce with a hand blender and season with cinnamon. For the rösti/potato pancakes, peel and finely grate the potatoes. Place the grated potatoes in a sieve and let the liquid drip into a bowl. Press the potato mixture down slightly to remove more liquid. Transfer the mixture to a bowl. Let the drained potato water stand for a moment so that the starch can settle. Peel the onion and finely grate it. Mix the potato mixture with the onion mixture, eggs, salt, pepper, and nutmeg. Now carefully drain the drained potato water, add the settled starch to the potato mixture, and stir everything in well. Heat a little oil in a pan. Using a ladle, add the potato mixture in portions to the pan and shape it into a rösti. When the edges of the rösti turn dark brown but not black, carefully flip them. Cook each side for about 4 minutes.
