Roulades with Bacon and Cucumber Filling

- 2 Beef roulades
- 2 Gherkins
- 4 disc Mixed with bacon, sliced
- Mustard, salt, pepper
- 3 Onion
- Sauce binder dark
- Salt and pepper the roulade and spread a thin layer of mustard.
- 1 Clean the onion, chop it into small pieces and distribute the amount on the roulade according to taste.
- Place bacon on top. A cucumber in the middle.
- Fold in the sides and roll up the meat with the filling into a roulade. Close the roulade with a roulade skewer or twine.
- Season on the outside with salt and pepper.
- Sear all over on all sides in a roasting pan.
- Deglaze with about 1.5 liters of water. Clean 2 onions, cut into quarters and add to the meat in the roasting pan.
- Simmer on the stove for 1.5 hours at medium temperature.
- Remove the roulades and use the sauce thickener to make a sauce from the meat juices, season again if necessary and sift again if necessary.
