Roulades with Puszta Salad Filling

- 2 Beef roulades
- Salt, pepper, mustard
- 3 tbsp Puszta salad
- 2 Onions
- Sauce binder dark
- Salt and pepper the roulade and spread a thin layer of mustard.
- Place the puszta salad in the middle of the roulade.
- Fold in the sides and roll up the meat with the filling into a roulade. Close the roulade with a roulade skewer or twine.
- Season on the outside with salt and pepper.
- Sear it all over on all sides in a roasting pan.
- Deglaze with about 1.5 liters of water. Clean 2 onions, cut into quarters and add to the meat in the roasting pan.
- Simmer on the stove for 1.5 hours at medium temperature.
- Remove the roulades and use the sauce thickener to make a sauce from the meat juices, season again if necessary and sift.
