Round semolina sesame coins

Ingredients for 1 servings:

  • 60 g wholemeal flour
  • 60 g spelt flour, light or wholemeal
  • 60 g durum wheat semolina
  • 80 g water, up to approx. 100 g
  • 3 g salt
  • 3 g fresh yeast
  • 1 tsp olive oil
  • e.g. sesame
  • n. B. corn semolina

Instructions

Working time approx. 12 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 12 minutes; Total time approx. 3 hours 24 minutes

Form a smooth yeast dough from the ingredients and let it rest briefly. Then roll it out and cut out circles using a dessert ring or glass. Place on baking sheets lined with baking paper and sprinkle with sesame seeds and cornmeal. Cover and let rise for 2-3 hours. Then bake at 200°C (400°F) for about 12 minutes. It depends on the thickness and size.
