Rowanberry-apple jam

Ingredients for 6 servings:

  • 400 g rowan berries, stripped, frozen
  • 600 g apples, peeled and chopped
  • 5 g citric acid
  • 1 pack of Gelfix Super 3:1
  • 350 g sugar
  • 50 ml schnapps (fruit schnapps or rowanberry schnapps)
  • 250 ml water
  • 1 tsp lemon(s) – grated peel

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

slightly tart jam made from rowan berries

Prepare all ingredients except the schnapps according to the instructions on the gelling sugar packet. Add the schnapps, bring back to a boil, and pour into jars while still hot. This jam tastes great with game dishes. Tip: Be sure to freeze the rowanberries for at least 24 hours, otherwise the jam will be too bitter.
