Rumfort casserole with stale bread or rolls

Ingredients for 4 servings:

  • 400 g stale bread or rolls
  • 250 ml milk, lukewarm
  • 500 g vegetables, e.g. leek, onion, carrot or whatever else is left
  • 1 bell pepper(s), red
  • 1 bell pepper(s), green
  • 4 slice(s) roast leftovers
  • 4 eggs
  • 200 ml milk
  • salt and pepper
  • Paprika powder, smoked
  • 150 g cheese, grated

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Recycling leftovers

Cut the bread into cubes. Pour lukewarm milk over it and let it sit for a while. Chop all the vegetables into small pieces and sauté them briefly in a pan. Cut the meat into small pieces. Place the soaked bread in a casserole dish and arrange the vegetables and meat on top. Whisk the milk with the eggs, season, and pour over the casserole. Sprinkle with grated cheese. Bake in an oven preheated to 180°C (top/bottom heat) for about half an hour on the middle rack.
