Rump Steak, Fried Mushrooms, Pumpkin & Port Wine and Onion Reduction
The perfect rump steak, fried mushrooms, pumpkin & port wine and onion reduction recipe with a picture and simple step-by-step instructions.
Rump steak, mushrooms & pumpkin:
- 4 Rump steak a´ 200g
- Sea salt from the mill
- 2 tbsp Clarified butter
- 200 g Mushrooms brown
- 200 g Hokkaido pumpkin
- Seasoned salt from my KB
- Chives rings
Raw salad with corn:
- 1 small Cucumber
- 1 Orange peppers
- 1 small can Corn
- 4 large leaves Pointed cabbage fresh
- 2 Carrots
- 3 Romaine lettuce hearts
- 150 g Yogurt
- 2 tbsp Mustard
- 2 tbsp Honey
- 4 tbsp Vinegar
- 1 tsp Seasoned salt from my KB
- 1 tsp Garlic pepper from my KB
- 1 pinch Freshly grated nutmeg
- 1 pinch Telly cherry pepper
- Chives rings
- 2 tbsp Rapeseed oil
Port onion reduction:
- 1 Onion red
- 200 ml Port red
- Telly cherry pepper
- Seasoned salt from my KB
Rump steak, mushrooms and pumpkin:
- Take the rump steak out of the fridge and let it cool down 🙂 Cut into the fat edge! But don’t cut into the meat! Clean the mushrooms and cut into slices. Clean and wash the pointed cabbage, cut into strips and knead well! Wash the pumpkin and cut into thin slices.
Raw fruit and vegetables salad:
- Clean the cucumber, wash it, cut in half, remove the core and cut into slices. Clean and wash the peppers and cut into strips. Peel the carrots and cut into fine strips. Drain corn! Add chives rolls! Make a salad dressing from the above ingredients! Finally, add the oil and add everything to the prepared vegetables, fold in well and leave to stand in the refrigerator!
- Clean the romaine lettuce, pluck a little, wash and spin. Peel, halve and slice the onion.
Rump steak, mushrooms & pumpkin:
- Preheat the oven to 80 degrees! Salt the rum steaks and heat the clarified butter in a pan and sear the rum steaks for 1.5 minutes on each side, then wrap them in aluminum foil and let them rest in the oven!
- In the meantime, fry the mushrooms first, then the pumpkin until crispy, season with seasoning salt, add the chives and put in the oven. Now roast the onions in the same pan (add clarified butter if necessary), then deglaze with port wine and simmer for 5 minutes. Pepper. Add the juices from the steaks, mushrooms and pumpkin to the sauce !!!
- Spread the romaine lettuce on plates, top with the raw vegetable salad. Add the rump steaks with the port wine and onion reduction and finally add the mushrooms and pumpkin! Who likes peppering his steak now, but we personally find it unnecessary! Pure meat taste !!!!
