Sponge Mixture: APPLE CAKE with Brittle Crunch
The perfect sponge mixture: apple cake with brittle crunch recipe with a picture and simple step-by-step instructions.
INGREDIENTS:
- 400 g Wheat flour type 550
- 16 g Baking powder (1 packet)
- 200 g Butter / margarine
- 160 g Sugar fine
- 1 tbsp Bourbon vanilla sugar *
- 5 whole Organic eggs size L (room temperature)
- 1 pinch Salt
- 1 tbsp Orange zest *
- 1 whole Lemon, squeezed
- 1 tsp Ground cinnamon
- 1 pinch Mace
- 1 pinch Clove powder
- 4 size Apples (Cox Orange / Cox Holsteiner / Boskoop)
- 4 tbsp Hazelnut brittle *
Preparation:
- To make this apple pie, it is really essential to choose a sweet and sour apple. The taste is decisive here. First peel the apples, cut them in half, remove the core and cut into smaller cubes. Squeeze the lemon. Mix the juice and the orange zest * with the apple pieces. Put aside.
- Mix flour with baking powder, cinnamon powder, mace and clove powder and sieve. Grease a 24cm springform pan and sprinkle with breadcrumbs. Preheat the oven to 170 ° top / bottom heat.
Preparation:
- Mix the butter / margarine, salt, sugar and vanilla sugar until frothy. Beat the eggs one by one. Work in the flour mixture by tablespoon. Mix the apple pieces with the finished dough with a spatula. Pour the dough into the prepared pan and smooth it out. Cover the surface with the brittle.
- Place the tin on the lowest rack in the oven and bake for 55-60 minutes. Make sure to do a chopstick test because every oven bakes differently.
- Take the cake out of the oven after baking and let sit for 10 minutes. Then loosen the ring, remove it and let the cake cool on a wire rack (at room temperature about 3-4 hours). The next day, the cake tastes particularly intense thanks to the spices.
- The cake is fluffy and yet very juicy. The crunch on top makes the special bite. My recommendation: Cinnamon or vanilla cream is definitely a very special treat, but that’s a matter of taste.
