Russian layered salad 'Herring in a fur coat'

Ingredients for 6 servings:

  • 4 m.-sized potatoes
  • 2 m.-large carrot(s)
  • 1 m.-sized onion(s)
  • 5 eggs, hard-boiled
  • 250 g fish (herring, pickled in oil)
  • Miracle Whip
  • 3 pieces of beetroot, cooked

Wash the potatoes and carrots and cook them with their skins on until tender (best done the day before, so the vegetables are easier to peel the next day!). I always use a flat, oval plate for this salad. The first layer is the potatoes, grated on a coarse grater. Many Russians add fish first, then the potatoes. I do it the other way around, so the herring juices are absorbed by the potatoes and don’t float in the bowl, even after standing for a while. The second layer is the herring, finely diced. The third layer is the onion, also finely chopped. The fourth layer is 4-5 tablespoons of mayonnaise. The fifth layer is cooked carrots, coarsely grated. The sixth layer is coarsely grated or finely diced eggs (save one yolk for decoration). The seventh layer is mayonnaise, the eighth layer is coarsely grated beetroot. The ninth layer is mayonnaise again. Shape everything nicely, cover with cling film, and let it chill in the fridge for a few hours, or preferably overnight. Then just decorate and enjoy!
