Ingredients for 2 servings:
- 250 g minced beef
- 1 large onion(s), red
- ½ tbsp olive oil
- ½ tbsp butter
- 1 leek(s)
- 3 tbsp tomato puree
- 1 tbsp broth
- ½ tbsp mustard, medium hot
- ½ tsp sweet paprika powder
- ½ tsp salt
- 50 g cashew nuts
- 1 tbsp sour cream
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
Chop the onion and sauté briefly in oil and butter in a large pan. Then increase the heat, add the minced meat to the pan, and stir with a large wooden fork until the meat is browned. Remove the minced meat from the pan and roast the cashews in it without adding any oil. Grind the roasted cashews in a food processor. Wash and cut the leek into thin strips. Mix together the tomato puree, stock, mustard, and spices. Return the minced meat to the pan and add the leek. Sprinkle the ground cashews over the top and stir in. Pour the seasoning mix over the meat and mix everything together. Simmer for 15 minutes over low heat, stirring frequently. Serve with the sour cream and serve.
