Ingredients for 2 servings:

  • 300 g mushrooms, brown
  • 200 g broccolini, alternatively broccoli
  • 200 g sweet potatoes
  • 1 large onion(s), red
  • 1 garlic clove(s)
  • 15 g butter
  • 15 ml extra virgin olive oil
  • Herb salt and pepper, freshly ground

Peel the sweet potato, halve it, and cut it into approximately 3 mm thick slices. Clean the mushrooms, removing any bad bits, then also cut them into approximately 3 mm thick slices. Set them aside separately. Peel the onion and garlic, finely dice them, and set them aside together. Wash the broccolini, trim the stem ends, and cut the stems into 3 cm pieces. Leave the part with the flower longer. Set the stems and flower parts aside separately. Heat butter and olive oil in a pan. Do not overheat. First, sauté the broccoli stalks over medium heat for 2-3 minutes, then add the mushrooms. Now add the sweet potato, mix, and cook for another 2-4 minutes. Sauté the onion and garlic for about 3 minutes. Finally, add the broccolini florets and finish cooking, stirring occasionally. The vegetables should still have some bite. The total cooking time is about 15 minutes. Season with herb salt and pepper to taste.
