Rustic sauerkraut

Ingredients for 4 servings:

  • 1 gr. can/n sauerkraut
  • 2 bay leaves
  • 3 grains of allspice
  • 1 large onion(s), diced
  • 130 g ham, diced (approx.)
  • Salt
  • pepper
  • nutmeg
  • n. B. water

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the sauerkraut with plenty of water, bay leaves, and allspice (the cabbage should be well covered with water). Cooking time: about 45 to 60 minutes, depending on how soft you want the cabbage to be. Shortly before the end of the cooking time, add salt, pepper, and nutmeg to the cabbage. Meanwhile, brown the diced ham in a pan. A little later, when some of the fat has rendered, add the onions to the ham and sauté until translucent. Add both to the cabbage shortly before the end of the cooking time. Stir well, bring to a boil once, and the sauerkraut is ready. If you like, you can grate in a raw potato at the end to give the sauerkraut a creamy texture. Sauerkraut is easy to precook; simply bring it to a boil briefly before serving. Note: This sauerkraut is sugar-free.
