Rye and honey cookies

Ingredients for 1 servings:

  • 185 g wholemeal rye flour
  • 165 g wheat flour
  • 70 g butter, soft
  • 2 eggs
  • 1 tsp, heaped baking powder
  • 100 g honey (rapeseed honey)
  • possibly chocolate coating
  • possibly flavoring or nuts of your choice

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Simple, soft cookies. Makes about 20.

Combine all ingredients in a bowl and knead thoroughly. Roll out the dough and cut out shapes using cookie cutters. Bake on a baking sheet in a preheated oven at 200°C for 10 minutes. If you prefer crispier cookies, increase the baking time by about 2-3 minutes or cut out thinner cookies. If you like, you can also coat the cookies with chocolate coating or add flavoring or nuts to the dough (although this might alter the consistency).
