Ingredients for 1 servings:
- 2 kg potatoes, floury
- 3 egg yolks
- 2 tbsp flour
- Salt
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Boil and peel the potatoes the day before with their skins on. Put the potatoes through a grinder or press them in a ricer, mix with egg yolk and flour, and season with salt. Form the mixture into small dumplings, about 4 cm in diameter, and let them sit in hot, salted water for about 20 minutes. Tip: Make a test dumpling; if it falls apart, add more flour to the dough.
