SABO – Spinach Gratin

Ingredients for 4 servings:

  • 500 g spinach
  • 2 tbsp olive oil
  • 3 shallots, chopped
  • 2 clove(s) garlic, chopped
  • 150 g cream
  • 70 g butter
  • 200 g Gorgonzola, crushed
  • Butter, for the mold
  • Salt
  • Cayenne pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sauté the shallots and garlic in olive oil, add the spinach and let it wilt. Season the spinach to taste. Bring the cream to a boil, stir in the butter and cheese, and let it melt. Season the sauce to taste. Layer the spinach in a greased dish, spread the Gorgonzola sauce over it, and bake at 200°C for about 20 minutes.
