Ingredients for 1 servings:
- 100 g pasta
- 2 large carrots
- 1 small onion(s), chopped
- 1 small garlic clove(s), chopped
- 50 ml cream (soy) or sour cream
- Margarine or butter
- 1 handful of fresh parsley, chopped
- salt and pepper
- e.g. saffron
- Cayenne pepper
- some cherry tomatoes, halved
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Cook the pasta according to the package instructions and drain. Peel the carrots into thin strips. Sauté in hot oil until al dente, briefly sauté the onion and garlic, and pour in the cream. Stir in the saffron. Season generously. Mix the sauce with the pasta, let it marinate briefly, and finally, fold in the parsley and cherry tomatoes. Serve with a crisp green salad.
