Saffron chicken with noodles

Ingredients for 2 servings:

  • 2 chicken breasts
  • 1 m.-sized onion(s)
  • 2 cloves garlic
  • 200 g mushrooms, white or brown
  • 2 tbsp crème fraîche
  • 2 dl cream
  • ¼ bell pepper(s), red
  • ¼ bell pepper(s), yellow
  • ¼ bell pepper(s), green
  • 300 g pasta or more
  • salt and pepper
  • Paprika powder
  • 1 packet of saffron powder

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cook the pasta according to the package instructions. Dice the chicken, onion, bell pepper, mushrooms, and garlic. Brown the chicken and remove from the pan. Sauté the onion, garlic, and mushrooms. Add 1-2 dl. of water and simmer for 10 minutes. Season with salt, pepper, paprika, and saffron. Add the bell pepper and mix well. Simmer for 5 minutes. Return the chicken to the pan and reduce the heat to low, adding the crème fraîche. Finally, add the cream. Garnish with parsley and serve with the pasta.
