Ingredients for 1 servings:

  • 1 portion of shortcrust or puff pastry (refrigerated section)
  • 4 eggs, size L
  • 300 g crème fraîche with herbs
  • 250 g blue cheese (Saint Agur)
  • 150 g Emmental cheese, grated
  • 150 g smoked ham or bacon
  • some black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Preheat oven to 180 degrees (top/bottom heat). Place the dough, including the baking paper, into a 26 cm tart or springform pan, forming a 2-3 cm high rim and pricking it several times with a fork. Cut the ham or bacon into thin strips or small cubes. In a bowl, mix the eggs with the crème fraîche. Add the Saint Agur to the bowl and mash it lightly with a fork. Add the grated cheese, ham or bacon, mix everything together, and season with pepper. Pour the mixture onto the dough and bake in the hot oven on the middle rack for 40 minutes. A green salad goes very well with it.
