Salad. Carrot Salad with Oranges and Pumpkin Brittle
The perfect salad. carrot salad with oranges and pumpkin brittle recipe with a picture and simple step-by-step instructions.
for the salad:
- 8 Carrots
- 4 Spring onions
- 3 Oranges
- 2 tbsp Orange juice
- 2 tbsp Corn oil
for the marinade:
- 4 tbsp Soy sauce
- 2 tbsp Orange juice
- 3 tbsp Vegetable broth
- 2 tbsp Bianco balsamic vinegar
- 0,5 tsp Mustard
- 0,5 tsp Sugar
- 1 tbsp Chive rolls
Pumpkin brittle:
- 3 tbsp Sugar brown raw sugar
- 100 g Pumpkin seeds
- 2 tbsp Soy sauce
for the salad
- doe peel the carrots and roughly grate them with the food processor.
- Peel and fillet oranges, cut into small pieces.
- Cut the spring onions into rings.
- Put everything in a large bowl, pour the orange juice and oil over it and mix well
for the marinade
- Mix the ingredients together in a small bowl, pour over the carrots. Mix well and let steep for about 30 minutes
Pumpkin brittle
- Heat the sugar in a pan, as soon as it starts to become liquid add the pumpkin seeds (caution: the pumpkin seeds can not only pop but also shoot the cook :-D) …. Now stir the pumpkin seeds and let them caramelize then deglaze with soy sauce. Remove from the hot plate, otherwise the stuff can burn
Serve
- Man / woman can choose different variants. Either mix the brittle directly into the salad (that’s how I did it) or fill the salad into small bowls and put the brittle on top as a decoration.
