Salad with white beans and tomatoes

Ingredients for 4 servings:

  • 1 can white beans
  • 1 m.-sized onion(s)
  • 2 tomatoes
  • ½ bunch basil
  • 1 tbsp capers
  • 1 tbsp wine vinegar or herb vinegar
  • 2 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Italian starter / antipasto

Place the white beans in a sieve and rinse with cold water. Then let them drain slightly. Peel the onion, halve it (or quarter it, depending on its size), and slice it into rings. Remove the stem ends from the tomatoes and finely dice them. Chop the basil. Mix the beans, onion strips, diced tomatoes, basil, and capers. In a small bowl, mix the vinegar with oil, salt, and pepper and add to the salad. Let it marinate a little. Serve with ciabatta. A lovely snack for two or as a starter for four.
