Raffaello cherry mousse in an ice cream cone

Ingredients for 4 servings:

  • 175 g sour cherries, from the jar
  • 100 g confectionery (Raffaello)
  • 100 g whipped cream
  • 1 tsp vanilla sugar
  • Ice cream cones
  • Desiccated coconut

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Grind the Raffaello chocolates in a blender and set aside. Drain the cherries and set some aside for decoration. Grind the remaining cherries in the blender as well. Whip the cream with the vanilla sugar until stiff peaks form. Fold the cherries into the cream first, then the Raffaello mixture. Refrigerate the mixture for a while. To serve, pour the mixture into ice cream cones and garnish with a few cherries and coconut flakes.
