In most cases, salami in one piece can be kept for several weeks after the best-before date (MHD). You can still eat the salami, especially if it shows no changes at all, such as a grey-greenish color, a greasy surface, a musty smell or a bitter taste. If you are unsure about one of the points, it is better to dispose of the sausage. In any case, you should use up the salami soon.

Salami is one of the long-life sausages and is a raw sausage that has been preserved by air drying and/or smoking. The low water and very high salt content in the end product and the use of nitrite curing salt prevent premature spoilage. For these reasons, whole salami can also be stored outside the refrigerator in a cool, dry (basement) room at 15 to 20°C.

Sliced ​​salami, on the other hand, is quite sensitive to dehydration. In order to delay this, the slices should be stored stacked on top of each other in the fridge, preferably in fresh storage boxes, and eaten soon.
