Salmon and cucumber pan

Ingredients for 2 servings:

  • 500 g cucumber(s)
  • 1 small onion(s)
  • 1 tbsp oil
  • 2 tsp flour
  • 150 ml whipped cream
  • 250 ml vegetable stock
  • 2 tsp mustard, grainy
  • 350 g salmon fillet(s)
  • some salt and pepper
  • lemon juice
  • ¼ bunch parsley, flat

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel the cucumber, halve it, and scoop out the seeds with a spoon. Then cut it into 1.5 cm half rings. Finely dice the onion. Heat the oil in a suitable pan and sauté the diced onion until translucent. Add the cucumbers and fry for 2 minutes. Sprinkle with flour and fry briefly. Add the heavy cream, vegetable stock, and mustard, and simmer covered over medium heat for 8 minutes. Cut the salmon fillet into 2.5 x 2.5 cm cubes. Add to the cucumbers and continue simmering for 8 minutes. Finely chop the parsley and stir it into the salmon and cucumber pan before serving.
