Ingredients for 3 servings:
- 200 g smoked salmon
- 400 g pasta, cooked (or just a leftover)
- 1 cucumber(s)
- 200 g cheese (goat cheese roll)
- ½ bunch basil (striped)
- Salt and pepper, red, ground
- 2 garlic cloves
- olive oil
- possibly tomato(s), dried
- pepper

delicious, quick and spicy…
Wash the cucumber thoroughly and quarter it lengthwise without peeling it. Gather the quarters and cut them into slices. Cut the smoked salmon into strips, and cut or tear the basil into strips. Slice the goat cheese and quarter them. Heat the olive oil, fry the cucumbers, add the garlic, and sauté briefly. Add the cooked pasta (I used mini farfalle), and stir-fry everything. Season with salt and pepper and add the salmon strips. Sauté. Add the goat cheese and reduce the heat. Melt the cheese while stirring, add the basil, and stir everything well. Season to taste with salt, pepper, and coarsely ground red pepper. Serve immediately. This recipe was concocted one evening when I had no idea what to cook and this cucumber was beaming at me, just waiting to be used up… It’s delicious, light, and easy to store… I could also imagine this dish being delicious with sliced sun-dried tomatoes. Dill or tarragon would also be suitable herbs. Fresh salmon works, of course, but it needs to be seasoned more heavily with salt. Instead of red pepper, you can also use unpickled green pepper… or you can simply leave it out.
