Salmon and eggplant bread

Ingredients for 2 servings:

  • 1 eggplant(s)
  • olive oil
  • Salt
  • 2 slices of farmhouse bread
  • 125 g smoked salmon, sliced
  • e.g. mayonnaise

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Wash the eggplant, remove the ends, slice, and season with salt. Heat olive oil in a large nonstick pan and fry the eggplant slices slowly. When they’re browned, turn them over and add a little more olive oil. I always add a little at a time so they don’t absorb the fat. Let cool slightly. Spread mayonnaise on the two slices of farmhouse bread. Top with smoked salmon and place the fried eggplant slices on top.
