Salmon and grapefruit tartar

Ingredients for 10 servings:

  • 100 g smoked salmon, finely diced
  • 1 grapefruit(s), pink, peeled and finely diced
  • 1 tbsp sunflower oil
  • 1 tbsp sesame oil
  • 2 tbsp pumpkin seeds
  • Salt and pepper, black, from the mill

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

also suitable as an amuse-gueule on the spoon

Toss the salmon with the grapefruit cubes, add both oils, and mix everything together. Season to taste with salt and pepper. Roast the pumpkin seeds in a pan without oil over medium to high heat for about 5 minutes. Be careful not to let them burn; they can cook quickly. Divide the tartar among amuse-bouche spoons and garnish with the pumpkin seeds. If you like, you can also use the grapefruit juice that was released during chopping.
