Salmon fillet Caprese

Ingredients for 2 servings:

  • 2 salmon fillets
  • 1 small zucchini
  • 1 tomato(s)
  • 200g mozzarella
  • olive oil
  • basil
  • oregano
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Thinly slice the zucchini and mozzarella. Dice the tomato and season with fresh herbs, salt, and pepper. Grease an ovenproof dish and place the zucchini slices in it, seasoning with salt and pepper. Place the fish on top. Place the diced tomatoes on top of the salmon fillets and finally top with the mozzarella. Bake in the oven at 180°C (350°F) for about 20-25 minutes. I served it with rosemary potatoes.
