Salmon fillet in spinach sauce with feta

Ingredients for 2 servings:

  • 2 salmon fillets (approx. 125 g each)
  • 150 g shrimp
  • salt and pepper
  • 1 small onion(s), finely chopped
  • 40 g butter
  • 2 tbsp flour
  • 200 ml vegetable stock
  • 200 ml milk
  • some curry powder
  • 200 g leaf spinach (frozen)
  • 2 tomatoes
  • 150 g feta cheese

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Thaw the spinach leaves. Then roughly chop. Melt the butter. Add the chopped onion and sauté briefly. Then stir in the flour and let it cook briefly. Deglaze with vegetable stock and milk, bring to a boil, and simmer gently for about 2 minutes. Season with salt, pepper, and a little curry powder. Halve, deseed, and dice the tomatoes. Mix them with the chopped spinach in the sauce. Pour some of the sauce into a baking dish. Season the salmon fillet with salt and pepper and place on top. Arrange the shrimp in the dish as well. Pour the remaining sauce over the top and sprinkle with diced feta cheese. Bake in a preheated oven at 200°C for about 20 minutes. We like to serve this with pasta (e.g., tagliatelle) or potatoes. Tip: Instead of the spicy feta cheese, you can also use another cheese, e.g. diced mozzarella.
