Salmon fillet on a bed of lentils

Ingredients for 3 servings:

  • 3 salmon fillets
  • 2 tbsp oil
  • 130 g lentils
  • 1 carrot(s)
  • 1 piece(s) celeriac (3 x 4 cm)
  • 1 large potato(s)
  • 1 piece(s) leek (2 cm)
  • 1 onion(s)
  • 1 clove(s) garlic
  • 400 ml water, possibly a little more for pouring
  • salt and pepper
  • possibly chili or stock powder
  • 3 tbsp pine nuts or sunflower seeds, roasted

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Clean and finely dice the carrots and leeks. Peel and finely dice the onions, garlic, celery, and potatoes. Sauté the onion in 1 tablespoon of oil, then add the lentils and vegetables. Sauté briefly, then pour in water and simmer for 30 minutes. Add the salt last, otherwise it will take longer to cook. Meanwhile, fry the salmon in the other tablespoon of oil. Season the lentils to taste and divide among plates. Place the salmon on top. Sprinkle the seeds over the top.
