Salmon on fruity oven-baked tomatoes

Ingredients for 2 servings:

  • 250 g salmon fillet(s) (2 fillets)
  • 300 g tomatoes
  • 100 g onion(s)
  • 1 garlic clove(s)
  • 1 tbsp olive oil
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Low-carb

Thaw frozen salmon beforehand. Place the salmon fillets in the center of a baking dish. Preheat the oven to 180°C (top/bottom heat). Cut the tomatoes and onions into slightly larger pieces and arrange them next to the salmon in the baking dish. Season with salt and pepper, then sprinkle the crushed garlic and oil over the tomatoes and onions. Place everything in the oven for about 25 minutes. Make sure the fish doesn’t get too dry. The tomatoes should be nice and soft and slightly shriveled, and the salmon should be cooked through, but not dry. Two servings contain 290 calories each.
