Ingredients for 2 servings:
- 2 portions of skinless salmon fillet(s)
- salt and pepper
- 2 tbsp mustard, grainy
- 1 tbsp sesame oil
- 2 tbsp maple syrup, approx.
- 1 tbsp sesame seeds
- 1 slice(s) of toast
- 1 tbsp clarified butter

Mix the topping ingredients well. Lightly toast the bread and cut into very small cubes. Toast the sesame seeds in a non-stick pan without fat, place on a plate, and heat the clarified butter in the hot pan. Fry the toast cubes in it, stirring occasionally, until crispy. Mix the toast cubes and sesame seeds. Preheat the oven to 200°C. Wash the salmon, pat dry, season all over with salt and pepper, and place in a shallow ovenproof dish. Spread the topping over the salmon. Place the dish in the oven and cook the salmon for approximately 8-10 minutes. Cooking time may vary depending on the thickness of the fillets and your oven. Serve the salmon fillets with the croutons and your choice of side dish.
