Ingredients for 2 servings:
- 200 g rice
- 2 small cans of white beans
- 2 salmon fillets
- some salt and pepper
- 1 onion(s)
- 1 mango(s)
- 2 tbsp lime juice
- some parsley, chopped
- 1 tsp cumin
- ½ tsp curry
- ¼ tsp cayenne pepper
- ½ tsp allspice berries
- ½ tsp cinnamon
- ¼ tsp salt

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes
You’ll find a delicious, fruity mango salsa with Caribbean-spiced salmon in this recipe. It’s an incredible taste experience with fruitiness and great spices. 1. Cook the rice in the background. 2. Drain the beans and let them pop in a hot pan (with a lid). 3. Put the spices in a coffee grinder and grind them or crush them with a mortar and pestle. 4. Remove the beans from the pan and season with salt and pepper. 5. Wash the salmon and sprinkle the rub on top. 6. Finely chop the onion, also cut the mango into very small pieces and mix them with the parsley in a bowl. Season the salsa with lime juice, salt and pepper. 7. Just before the rice is cooked, fry the salmon fillets. 8. Stir the beans into the rice and serve with the salmon and salsa. Have fun trying it out!
